Watercress is an aquatic plant from the mustard family. This plant is native to both Europe and Asia and is one of the oldest known greens to be eaten by humans. It grows in abundance in San Francisquito Creek that runs through the dam site. It is a delicious green plant that can be used in salads.  It has a spicy piquant flavor that combines well with goat cheese and balsamic vinegar. Add a few cranberries and you have lunch. It can also be cooked by steaming or in the microwave. You will recognize it in the spring when it blooms. It has clusters of small white flowers. The stems of the leaves are hollow, so the leaves float atop the water. Watercress is also called Yellowcress by some.
